Okay, so I realize that the picture looks kind of gross...but most soups DO look gross. This one is good, so just close your eyes and take a bite...
I cut up half an onion and cooked it in the pot with a little olive oil. Add 1/2 cup red lentils and2 cups of water (or chicken or vegetable broth). Simmer until cooked. Throw a handful of cilantro and olive oil into a food processor (i.e. my magic bullet), and purree. When the lentils are done, add the cilantro, and a tablespoon of lemon juice. Add salt to taste. Tada!!! Yum.
My favorite from this book is his chili. Give it a try...
