Day 3 and 4....sidetracked with Pi

Interesting start to the week. As some of you know this week marks the beginning of a new chapter of my life...at least legally it does... So what does one do to mark such an occassion of being legally barred from ever seeing my standing mixer again?? - I eat lots of pizza from Pi!!!

Monday night, two of my co-workers/friends took me out to Pi for some yummies. This is the place I have mentioned before that serves the most amazing vegan (and regular, of course) pizza - so good that its one of Obama's favorites as well. Anyway, I got a zucchini and spinach pizza that was delicious and a Pi2 (basil martini) - yum yum!! We had a blast talking and laughing. Then Tuesday night came...I had the meal ready to go - chickpea salad. But, the other half of my pizza was just sitting in the fridge calling out my name. I couldn't not eat it... and now my tummy is full and happy.

SO, since I've missed two meals, I'll make those my lunch and supper for tomorrow and figure out what to do for breakfast at 7am when I'm rushing out of the house so I can get to work on time. In the meantime, here are some of the yummy dishes I ate over the past two days.


This was the breakfast biscuit. I like that it looked really greasy and not healthy like you would get at a diner or something - when in reality it was really good and not unhealthy. Good little meal. I must say I like Morningstar Farms breakfast sausage better, but this was pretty darn good.


This looked a lot prettier in person than in this picture. This was mediteranian couscous - it had couscous (duh), almonds, spinach, green onion, olives and some other spices. Olives kind of freak me out and I've never eaten them much, so besides that it was a good and filling lunch.



This colorful bowl was the tofu chow mein - can you say Yum?? Good flavor, and even the tofu came out really good after being cooked and frozen and recooked again.
Well, I guess that's all for now. I'm going to go watch some mindless television and go to bed with hopes of waking up to go for a run...we'll see...
